Ingredients

3 pounds chuck roast

1 tablespoon neutral oil

1 cup sliced yellow onion

5 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/2 cup soy sauce

2 tablespoons dark brown sugar

2 tablespoons gochujang

1 tablespoon sesame oil

1 tablespoon rice vinegar

3 scallions, chopped


Instructions

1. Pat the chuck roast dry and season generously with salt and pepper. Heat oil in a Dutch oven over medium-high heat and sear the roast on all sides until browned, about 3–4 minutes per side. Remove from pot and set aside.

2. Add onions to the same pot and sauté for 3 minutes. Stir in garlic and ginger and cook for 1 minute until fragrant.

3. Pour in the soy sauce, brown sugar, gochujang, sesame oil, and rice vinegar. Stir well and bring to a gentle simmer.

4. Return the roast to the pot, nestling it into the sauce. Cover with lid and place in a preheated oven at 325°F for 3 to 3.5 hours.

5. Remove roast from oven and let rest for 10 minutes. Shred meat with two forks.

6. Stir shredded meat back into the sauce. Add chopped scallions just before serving.
