Ingredients
8 cups finely chopped green cabbage
1/4 cup finely grated carrot
2 tablespoons finely minced onion
1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup whole milk
1/4 cup buttermilk
2 1/2 tablespoons white vinegar
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Finely chop the cabbage until very small pieces form. Grate the carrot and finely mince the onion.
2. In a large bowl, whisk together the mayonnaise, sugar, milk, buttermilk, white vinegar, lemon juice, salt, and black pepper until smooth.
3. Add the cabbage, carrot, and onion to the bowl and mix until fully coated.
4. Cover and refrigerate for at least 4 hours or overnight for best flavor.
5. Stir well before serving and adjust seasoning if needed. Serve chilled.
Notes
Finely chopping the cabbage is the key to the authentic KFC texture.
Letting it chill overnight gives the best flavor.
Stir before serving as cabbage releases natural moisture while resting.
