Ingredients
12 slices corned beef
6 slices Swiss cheese
¾ cup sauerkraut, well-drained
4 teaspoons sugar-free Russian dressing
1 tablespoon melted butter
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Lay out 12 slices of corned beef on a board, overlapping two slices if needed for sturdiness.
3. Top each slice with ½ slice of Swiss cheese.
4. Add 1 tablespoon of well-drained sauerkraut to each.
5. Drizzle 1 teaspoon of sugar-free Russian dressing over the sauerkraut.
6. Roll up each piece tightly and place seam-side down on the baking sheet.
7. Brush the tops with melted butter.
8. Bake for 15–18 minutes until golden and cheese is bubbly.
9. Remove from oven and cool slightly before serving.
10. Serve with extra dressing or mustard dip on the side.
