Ingredients
4 cups chicken broth
1/2 cup pastina (stelline)
1 clove garlic, minced
1 tablespoon butter
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons grated Parmesan cheese
1 tablespoon chopped fresh parsley (optional)
1 egg, beaten (optional)
Instructions
1. Pour 4 cups of chicken broth into a medium saucepan. Add the minced garlic and bring to a gentle boil over medium heat.
2. Stir in 1/2 cup pastina and reduce heat to a simmer. Cook uncovered for 5–6 minutes, until tender.
3. Turn off heat. Stir in 1 tablespoon butter, salt, and pepper. Mix well to combine.
4. Optional: Slowly drizzle in the beaten egg while gently stirring to create ribbons.
5. Ladle into bowls and top with grated Parmesan and parsley. Serve hot.
Notes
For extra comfort, stir in a splash of lemon juice before serving.
To avoid soggy pasta in leftovers, store cooked pastina and broth separately.
Make it richer by adding more cheese or a drizzle of olive oil.
