Ingredients
2 red bell peppers, thinly sliced
2 yellow bell peppers, thinly sliced
1 medium red onion, thinly sliced
2 tablespoons olive oil, plus extra for drizzling
1 cup fine cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 1/2 cups water
2 tablespoons chopped fresh parsley
Instructions
1. Preheat oven to 400°F and grease a metal baking pan or line it with parchment.
2. Sauté the sliced peppers and red onion in 2 tablespoons of olive oil just until softened, about 5–7 minutes.
3. In a large bowl, whisk together cornmeal, flour, salt, and pepper.
4. Slowly pour in water, whisking constantly, until a smooth, pourable batter forms.
5. Stir the sautéed vegetables and parsley into the batter until fully combined.
6. Pour the batter into the prepared pan and spread it evenly.
7. Drizzle the top lightly with olive oil.
8. Bake for 35–40 minutes, until golden brown and crisp at the edges.
9. Let cool slightly before slicing into squares and serving.
Notes
Use a metal pan for best crispiness—glass or ceramic won’t brown the edges as well.
Let the scarpaccia rest before slicing so it holds together.
Don’t overload with vegetables or it may not bake through evenly.
