Ingredients
8 ounces wide rice noodles
1 pound boneless skinless chicken breast, thinly sliced
2 tablespoons vegetable oil
4 cloves garlic, minced
1 small onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 Thai chilies, sliced
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon fish sauce
2 teaspoons brown sugar
1 cup fresh Thai basil leaves
1 lime, cut into wedges
Instructions
1. Cook the rice noodles according to package directions until just tender, then drain and set aside.
2. In a small bowl, whisk together the soy sauce, oyster sauce, fish sauce, and brown sugar.
3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
4. Add the sliced chicken and cook for 4 to 5 minutes until lightly browned and cooked through, then transfer to a plate.
5. Add the remaining oil to the skillet, then stir in the garlic, onion, and Thai chilies.
6. Cook for about 1 minute until fragrant, then add the red and green bell peppers.
7. Stir-fry the vegetables for 2 to 3 minutes until slightly softened but still crisp.
8. Return the chicken to the skillet and add the drained noodles.
9. Pour the sauce over everything and toss gently until the noodles are evenly coated and heated through.
10. Add the Thai basil and stir just until wilted.
11. Serve immediately with lime wedges on the side.
Notes
Use Thai basil if possible for the most authentic flavor, but regular basil works in a pinch.
Do not overcook the noodles because they will continue to soften once tossed in the hot skillet.
