Ingredients

2 pounds beef chuck roast, cut into chunks

1 teaspoon salt

1/2 teaspoon black pepper

3 tablespoons all-purpose flour

2 tablespoons olive oil

1 large yellow onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

1 cup Guinness stout

4 cups beef broth

1 tablespoon Worcestershire sauce

4 large carrots, peeled and cut into chunks

1 1/2 pounds Yukon Gold potatoes, cut into chunks

2 celery stalks, sliced

1 tablespoon fresh thyme leaves

2 bay leaves

1 cup frozen peas

2 tablespoons fresh parsley, chopped


Instructions

1. Pat the beef dry and cut it into even chunks. Season with salt and black pepper, then toss with the flour until lightly coated.

2. Heat the olive oil in a large Dutch oven over medium-high heat. Brown the beef in batches, then transfer it to a plate.

3. Add the onion and celery to the pot and cook until softened, about 5 minutes. Stir in the garlic and tomato paste and cook for 1 minute more.

4. Pour in the Guinness and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 to 3 minutes.

5. Return the beef to the pot. Add the beef broth, Worcestershire sauce, carrots, potatoes, thyme, and bay leaves. Stir well.

6. Bring the stew to a gentle simmer, then reduce the heat to low. Cover partially and cook for 2 to 2 1/2 hours, stirring occasionally, until the beef is tender.

7. Stir in the peas during the last 5 minutes of cooking. Remove the bay leaves, garnish with parsley, and serve warm.

Notes

Let the beef brown in batches so it sears instead of steaming.

For the best flavor, let the stew simmer low and slow until the beef is fork-tender.

This stew tastes even better the next day after the flavors have had more time to develop.
