Ingredients

6 large yellow onions, thinly sliced

4 tablespoons unsalted butter

1/2 cup dry white wine

6 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons fresh thyme (or 1 teaspoon dried)

1 bay leaf

1 baguette, sliced and toasted

2 cups shredded Gruyère cheese

Salt and pepper to taste


Instructions

1. Turn Instant Pot to sauté mode. Melt the butter and add the sliced onions. Cook, stirring often, until onions are deeply caramelized, about 15–20 minutes.

2. Pour in white wine to deglaze the pot. Scrape up any browned bits from the bottom using a wooden spoon.

3. Add the beef broth, Worcestershire sauce, thyme, and bay leaf. Lock lid and set valve to sealing. Cook on high pressure for 15 minutes.

4. Allow pressure to release naturally for 10 minutes, then do a quick release. Discard bay leaf.

5. Preheat broiler. Toast baguette slices on a baking sheet until golden and crisp.

6. Ladle hot soup into broiler-safe bowls. Top each with a slice or two of toasted bread and a generous handful of shredded Gruyère.

7. Place bowls on a baking sheet and broil until cheese is bubbly and golden brown. Serve hot.
