Ingredients
3 large eggs
1 cup pumpkin puree
1/2 cup monk fruit sweetener
1 tsp vanilla extract
1 cup almond flour
1/3 cup oat flour
1 1/2 tsp pumpkin pie spice
1/2 tsp baking soda
1/4 tsp salt
Instructions
1. Preheat oven to 350°F and line an 8×8 inch baking pan with parchment paper or grease it lightly.
2. Whisk the eggs in a large bowl until frothy to create a fluffy texture.
3. Add pumpkin puree, monk fruit sweetener, and vanilla extract to the eggs and mix well.
4. Fold in the almond flour, oat flour, pumpkin pie spice, baking soda, and salt until just combined.
5. Pour the batter into the prepared pan and smooth the top evenly.
6. Bake for 25–28 minutes or until a toothpick inserted in the center comes out clean.
7. Cool completely in the pan before slicing to allow the bars to firm up.
Notes
Use room temperature eggs for best volume when whisking.
