Ingredients
2 large russet potatoes
1/4 small onion, finely minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil, for frying
1 tablespoon butter, for frying
Instructions
1. Peel and grate the potatoes using the large holes of a box grater.
2. Wrap the grated potatoes in a clean towel and squeeze out as much moisture as possible.
3. Transfer the potatoes to a mixing bowl and stir in the minced onion, salt, and pepper.
4. Form the mixture into 6 oval or round patties, about 1/2 inch thick.
5. Heat oil and butter in a skillet over medium-high heat until shimmering.
6. Add patties to the pan without overcrowding and cook for 4–5 minutes on one side until golden brown.
7. Flip and cook the other side until crispy and cooked through, about another 4 minutes.
8. Drain on paper towels and sprinkle with a bit more salt while hot.

Notes
Use russet potatoes for their higher starch content – they crisp up better than waxy varieties.
