Ingredients
1 can chickpeas drained and rinsed
0.5 cucumber chopped
1 cup cherry tomatoes halved
0.25 red onion thinly sliced
1 avocado cubed
0.5 cup feta cheese crumbled
3 tablespoons olive oil
1 lemon juiced
1 small garlic clove grated
pinch of salt
pinch of black pepper
Instructions
1. Drain and rinse the chickpeas and place them in a large salad bowl.
2. Chop the cucumber, halve the tomatoes, and thinly slice the red onion. Add them to the bowl.
3. In a small bowl, whisk together olive oil, lemon juice, grated garlic, salt, and pepper.
4. Cube the avocado and add it to the salad along with crumbled feta.
5. Pour the dressing over the salad and gently toss to combine without mashing the avocado.
6. Let the salad sit for 10–15 minutes in the fridge to allow flavors to meld, or serve immediately.
Notes
Use freshly crumbled feta instead of pre-crumbled for best texture.
Chill the chickpeas before tossing if serving immediately for a crisp finish.
Avoid overmixing once avocado is added to keep chunks intact.
