Ingredients
2 sheets puff pastry, thawed
2 cups pitted cherries (fresh or thawed from frozen)
1/3 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1 large egg
1 tablespoon water
2 tablespoons coarse sugar (for topping)
Instructions
1. In a saucepan, combine cherries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat for 5–7 minutes until thickened. Remove from heat and stir in vanilla. Cool completely.
2. Roll out the puff pastry slightly on a floured surface. Cut each sheet into 4 equal squares (total of 8).
3. Spoon cherry filling into the center of each square. Fold into a triangle and seal edges with a fork.
4. Place on a parchment-lined baking sheet. Mix egg and water, then brush tops with egg wash. Sprinkle with coarse sugar.
5. Bake at 400°F (200°C) for 18–22 minutes until golden brown. Cool for 10 minutes before serving.
Notes
• Make sure the cherry filling is fully cooled before assembling to avoid soggy pastry.
• Use all-butter puff pastry for the flakiest, richest results.
• These can be frozen unbaked and baked directly from frozen.
