Ingredients

4 cups bread flour

1 tablespoon granulated sugar

1 1/2 teaspoons salt

2 1/4 teaspoons instant yeast

1 1/4 cups warm water

1 cup blueberries

1 tablespoon honey

1 egg


Instructions

1. In a large bowl, mix the bread flour, sugar, salt, instant yeast, and warm water until a shaggy dough forms. Gently fold in the blueberries.

2. Knead the dough on a lightly floured surface for 8 to 10 minutes until smooth and elastic.

3. Place the dough in a lightly greased bowl, cover, and let it rise for 1 hour or until puffy.

4. Divide the dough into 8 equal pieces and shape each one into a ball. Poke a hole through the center and gently stretch into a bagel shape.

5. Place the shaped bagels on a parchment-lined baking sheet and let them rest for 15 to 20 minutes.

6. Preheat the oven to 425°F. Bring a large pot of water to a gentle boil and stir in the honey.

7. Boil the bagels in batches for 30 seconds per side, then return them to the baking sheet.

8. Beat the egg and brush it lightly over the tops of the bagels.

9. Bake for 20 to 24 minutes or until golden brown and set.

10. Cool slightly before slicing and serving.

Notes

Fold in the blueberries gently so they do not burst too much and streak the dough.

Make the center hole slightly larger than needed because it will shrink during resting and baking.
