Ingredients

8 large eggs

1 tablespoon olive oil

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 red onion, chopped

1 cup sliced mushrooms (optional)

2 cups fresh baby spinach

1 pound ground sausage or plant-based sausage

1 and 1/2 cups sharp cheddar cheese, shredded

8 large flour tortillas (10-inch burrito size)

Salt and pepper to taste


Instructions

1. Preheat oven to 425°F and roast chopped bell peppers, onion, and mushrooms with olive oil, salt, and pepper for 20 minutes.

2. In a skillet, cook sausage over medium heat until browned and fully cooked. Set aside.

3. Wipe out the pan, add a splash of oil or butter, and scramble the eggs gently over medium-low heat until just set. Season lightly.

4. Warm tortillas slightly to make them pliable. Lay them out and fill each with a portion of eggs, sausage, roasted veggies, spinach, and shredded cheese.

5. Fold in the sides and roll into burritos. For immediate eating, toast each burrito in a skillet until golden. For freezing, wrap each in parchment and foil.

6. Place wrapped burritos in a zip-top freezer bag and store in the freezer.

7. To reheat, microwave for 2-3 minutes (unwrapped), or bake in foil at 375°F for 25-30 minutes.

Notes

Make sure all fillings are cooled before assembling to prevent soggy tortillas.
