Ingredients

6 large eggs

1 cup cottage cheese

1 cup shredded cheddar cheese

4 slices turkey bacon, cooked and chopped

1 cup fresh spinach, chopped

2 green onions, sliced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil or nonstick spray


Instructions

1. Preheat the oven to 350°F and grease a 12-cup muffin pan well with olive oil or nonstick spray.

2. Add the eggs, cottage cheese, salt, and black pepper to a blender and blend until smooth and slightly frothy.

3. Divide the chopped turkey bacon, spinach, green onions, and shredded cheddar evenly among the muffin cups.

4. Pour the egg mixture into each muffin cup, filling each one about three-quarters full.

5. Bake for 18 to 22 minutes, or until the centers are set and the tops are lightly golden.

6. Let the egg bites cool in the pan for 5 minutes before loosening the edges and removing them.

7. Serve warm, or cool completely before storing in the fridge or freezer.

Notes

Blend the egg base well for the fluffiest texture.

Do not overbake, or the egg bites can become rubbery.

Let them cool slightly before removing so they hold their shape better.
