Ingredients

2 medium zucchini

2 tablespoons low-sodium soy sauce

2 teaspoons sesame oil

1 tablespoon mirin or 1 teaspoon sugar

2 garlic cloves, minced

1 tablespoon neutral oil (like avocado or vegetable)

1 tablespoon toasted sesame seeds

2 tablespoons chopped scallions

Instructions

1. Wash and dry the zucchini, then cut into 1/2-inch rounds or half-moons.

2. Heat a skillet over medium-high heat and add neutral oil.

3. Add zucchini in a single layer and sear without moving for 2–3 minutes.

4. Flip and cook the other side until golden.

5. Add minced garlic and cook for 30 seconds.

6. Pour in soy sauce, mirin (or sugar), and sesame oil. Stir to coat and let it bubble.

7. Turn off heat and toss zucchini in the sauce.

8. Top with sesame seeds and scallions before serving.

Notes

Use a hot pan to get the best caramelization.

Slice zucchini thick enough to keep a tender bite.

Taste the sauce before adding to adjust sweetness or salt.
