8 ounces cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

8 ounces semi-sweet or dark chocolate, melted and cooled

2 cups heavy whipping cream

2 teaspoons unflavored gelatin

2 tablespoons cold water

4 ounces semi-sweet chocolate, chopped

1/2 cup heavy cream

1 cup fresh raspberries for garnish

1/4 cup chocolate curls or shaved chocolate


Instructions

1. Preheat the oven to 350°F and line the bottom of a 9-inch springform pan with parchment paper. Lightly grease the sides.

2. In a mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.

3. Add egg, milk, oil, and vanilla extract. Mix until smooth, then stir in hot coffee or hot water until the batter is thin and glossy.

4. Pour the batter into the prepared pan and bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

5. Let the cake cool completely in the pan before adding the mousse layers.

6. Stir raspberry preserves with lemon juice, then spread the mixture over the cooled cake base. Scatter fresh raspberries over the preserves.

Make sure the cake base is completely cool before adding the raspberry layer and mousse, or the filling may soften.

Let the melted chocolate cool before mixing it into the mousse so the whipped cream stays airy and smooth.

For clean slices, dip a sharp knife in hot water, wipe it dry, slice, and repeat between cuts.
