Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
24 oz cream cheese, softened
3/4 cup granulated sugar
3 large eggs
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1 cup lemon curd
Instructions
1. Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang.
2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the pan and bake for 10 minutes. Let cool.
3. Beat cream cheese until smooth. Add sugar and mix well. Add eggs one at a time, beating between additions. Add lemon juice, zest, and vanilla extract. Beat until smooth.
4. Pour cheesecake mixture over crust. Bake 35–40 minutes until center is just set. Cool at room temperature for 1 hour.
5. Spread lemon curd evenly over cooled cheesecake. Chill for at least 4 hours or overnight.
6. Lift using parchment, slice into 16 bars with a clean knife, and serve chilled.
Notes
Always chill the bars before slicing for clean edges.
Use fresh lemons for both juice and zest for the best flavor.
Store in an airtight container in the fridge for up to 5 days.
