Ingredients
2 tablespoons olive oil
1 yellow onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 can (28 ounces) crushed tomatoes
4 cups vegetable broth
1/2 cup uncooked white rice
1 teaspoon dried basil
1/2 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup heavy cream or coconut milk
2 tablespoons fresh parsley or basil, chopped (optional)
Instructions
1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook for 7-8 minutes until softened.
2. Add garlic and cook for 1 more minute until fragrant.
3. Stir in crushed tomatoes, basil, oregano, salt, and pepper. Simmer for 5 minutes.
4. Pour in vegetable broth and bring to a gentle boil. Stir in uncooked white rice.
5. Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
6. Stir in heavy cream or coconut milk and simmer uncovered for 5 minutes.
7. Adjust seasoning if needed. Serve hot, garnished with fresh parsley or basil if desired.
Notes
Use fire-roasted tomatoes for deeper flavor.
Coconut milk makes a great dairy-free alternative to cream.
For make-ahead, cook rice separately to avoid mushiness on reheating.
