Ingredients

2 tablespoons olive oil

1 yellow onion, chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

2 teaspoons fresh rosemary, minced (or 1 teaspoon dried)

1 teaspoon fresh thyme (or 1/2 teaspoon dried)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

3 cans (15 oz each) cannellini beans, drained and rinsed

4 cups low-sodium vegetable broth

2 cups baby spinach

1 tablespoon fresh lemon juice


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onion, celery, and carrot. Sauté for 6–8 minutes until softened.

2. Stir in the garlic, rosemary, thyme, salt, black pepper, and red pepper flakes. Cook for 1 more minute.

3. Add the drained white beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

4. Scoop out about 2 cups of the soup and blend until smooth. Return the blended portion to the pot and stir well.

5. Add lemon juice and baby spinach. Let spinach wilt for 1–2 minutes. Taste and adjust seasoning if needed.

6. Serve hot with your favorite crusty bread or toppings.

Notes

Blending part of the soup adds creaminess without using dairy.

Don’t skip the lemon juice—it adds essential brightness at the end.

If using dried herbs, reduce the amount slightly and let them bloom in the oil for maximum flavor.
