Ingredients

1 lb ground turkey

1 tablespoon olive oil

1/2 cup diced yellow onion

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup low-sodium soy sauce or tamari

1 tablespoon rice vinegar

1 tablespoon toasted sesame oil

1 tablespoon honey or maple syrup

1 teaspoon sriracha or chili garlic sauce, optional

2 cups cooked rice, brown rice, quinoa, or cauliflower rice

4 cups chopped romaine, iceberg, or butter lettuce

1 cup shredded carrots

1 cup diced cucumber

1/4 cup sliced green onions

1 tablespoon sesame seeds

1/4 cup chopped cilantro or fresh herbs

1 lime, cut into wedges


Instructions

1. Whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and sriracha in a small bowl.

2. Heat olive oil in a large skillet over medium heat, then cook the onion until softened.

3. Add the ground turkey and cook until browned, breaking it apart with a spatula as it cooks.

4. Pour the sauce over the turkey and simmer for 3 to 4 minutes until the filling is flavorful and lightly glossy.

5. Divide lettuce and cooked rice, quinoa, or cauliflower rice between serving bowls.

6. Spoon the warm turkey mixture over each bowl.

7. Top with carrots, cucumber, green onions, sesame seeds, cilantro, and a squeeze of lime before serving.

Notes

Use cauliflower rice for a lighter low-carb version, or brown rice for a heartier meal.

Store the turkey filling separately from the lettuce and fresh vegetables to keep everything crisp.
