1 can (14.5 oz) diced tomatoes
6 cups vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
Instructions
1. In a large pot, heat olive oil over medium heat. Add diced onions, garlic, celery, and bell pepper. Cook for 5-7 minutes until softened.
2. Stir in the chopped carrots and cook for another 3 minutes.
3. Add the chopped cabbage and canned diced tomatoes. Stir to combine.
