Description

Hawaiian Pineapple Coconut Fluff is a cool, creamy, no-bake dessert salad packed with juicy pineapple, sweet coconut, fluffy whipped topping, marshmallows, and bright fruit. This easy recipe is perfect for summer dessert ideas, quick party food, potluck desserts, holiday food ideas, tropical dessert cravings, and simple make-ahead recipes when you want something sweet, chilled, and crowd-friendly.

Ingredients

20 ounces crushed pineapple with juice

3.4 ounces instant vanilla pudding mix

8 ounces whipped topping, thawed

1/2 cup sour cream or plain Greek yogurt

1 cup sweetened shredded coconut

2 cups mini marshmallows

11 ounces mandarin oranges, drained

1/2 cup maraschino cherries, drained and patted dry

1/2 cup chopped pecans or macadamia nuts, optional

1/4 cup toasted coconut for topping, optional

Instructions

1. Add the crushed pineapple with its juice to a large mixing bowl.

2. Sprinkle the instant vanilla pudding mix over the pineapple and stir until smooth and slightly thickened.

3. Stir in the sour cream or Greek yogurt until fully combined.

4. Gently fold in the whipped topping using a spatula.

5. Fold in the shredded coconut, mini marshmallows, mandarin oranges, and maraschino cherries.

6. Add chopped pecans or macadamia nuts if using, and fold gently.

7. Cover and refrigerate for at least 2 hours so the flavors blend and the fluff sets.

8. Stir gently before serving, then top with toasted coconut if desired.

Notes

Drain the mandarin oranges and cherries very well so the fluff stays creamy instead of watery.

Do not drain the crushed pineapple because the juice helps activate and thicken the pudding mix.

For the best flavor and texture, chill the fluff for at least 2 hours before serving.
