Ingredients

1 cup cooked quinoa

1 medium sweet potato, cubed

1 cup Brussels sprouts, halved

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup canned chickpeas, drained and rinsed

1/4 cup dried cranberries

1/4 cup toasted pecans

1/2 green apple, thinly sliced

1 cup baby spinach

3 tablespoons tahini

2 tablespoons lemon juice

1 tablespoon maple syrup

1 small garlic clove, minced

2–4 tablespoons warm water

Salt and pepper to taste


Instructions

1. Preheat the oven to 400°F. Toss cubed sweet potatoes and halved Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.

2. Cook the quinoa according to package directions, about 15 minutes. Let sit for 5 minutes and fluff with a fork.

3. In a small bowl or blender, combine tahini, lemon juice, maple syrup, garlic, salt, pepper, and warm water. Whisk or blend until smooth and creamy.

4. Toast the pecans in a dry pan for 2–3 minutes until fragrant.

5. Assemble the bowl: Start with a layer of spinach. Top with quinoa, roasted veggies, chickpeas, cranberries, apples, and pecans.

6. Drizzle generously with tahini dressing and serve immediately.

Notes

Let quinoa cool slightly before assembling to avoid wilting the spinach too much.

Always taste the tahini dressing and adjust lemon or maple syrup to your liking.

Slice the apple just before serving so it stays crisp and doesn’t brown.
