Ingredients

1/2 cup unsalted butter, softened

1/2 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

24 chocolate truffles or mini peanut butter cups

1/2 cup melted chocolate (for decorating)

48 candy eyes


Instructions

1. In a large bowl, cream together the peanut butter, butter, granulated sugar, and brown sugar until smooth.

2. Add egg and vanilla extract, beating until combined.

3. In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet mixture until dough forms.

4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

5. Roll dough into 1-tablespoon balls and place 2 inches apart on the sheet.

6. Bake for 9–10 minutes, until lightly golden.

7. Immediately press a truffle into the center of each warm cookie. Let cool completely.

8. Melt chocolate and use a piping bag or toothpick to draw spider legs on the sides of the truffle.

9. Dab melted chocolate on the back of each candy eye and press onto truffles.

10. Let decorations set before serving or storing.

Notes

Use parchment paper to prevent sticking and preserve cookie shape.

Don’t wait too long to press the truffle or it won’t adhere.

If decorating with kids, prep eyes and melted chocolate in advance for easy assembly.
