1 pound ground turkey

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon toasted sesame oil

1 cup shredded carrots

1 cup diced cucumber

1 red bell pepper, thinly sliced

2 green onions, sliced

1 avocado, sliced

1 tablespoon sesame seeds

1 tablespoon sriracha or chili garlic sauce, optional

2 tablespoons fresh cilantro or parsley, chopped


Instructions

1. Cook the rice according to package directions, then fluff it with a fork and keep it warm.

2. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, and sriracha if using.

3. Heat olive oil in a large skillet over medium-high heat.

4. Add the ground turkey and cook for 5 to 6 minutes, breaking it apart, until no longer pink.

5. Stir in the diced onion and cook for 2 to 3 minutes, until softened.

6. Add the garlic and cook for 30 seconds, just until fragrant.
