Ingredients
1 pound ground beef
1 cup long grain white rice (uncooked)
1 can (10.5 oz) cream of mushroom soup
2 cups low sodium chicken broth
1 small onion, finely chopped
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
Instructions
1. Preheat your oven to 350°F and grease a 9×13 inch baking dish.
2. In a large mixing bowl, combine ground beef (raw), uncooked rice, cream of mushroom soup, chicken broth, chopped onion, garlic powder, salt, and pepper.
3. Mix everything together thoroughly. It will look soupy—that’s perfect.
4. Pour the mixture into the prepared baking dish and spread it out evenly.
5. Cover tightly with foil and bake for 1 hour.
6. Remove foil and sprinkle shredded cheddar cheese over the top.
7. Return to the oven, uncovered, and bake for 10–15 more minutes, until cheese is bubbly and golden.
8. Let the casserole rest for 5–10 minutes before serving to allow it to set.
Notes
Use uncooked long grain rice for the best texture—instant rice will turn mushy.
Cover tightly with foil so the steam cooks the rice evenly during baking.
Always let the casserole rest after baking to make slicing and serving easier.
