Ingredients

1 lb frozen tater tots

8 large eggs

2 tbsp milk

8 oz breakfast sausage

1 cup shredded cheddar cheese

1 tbsp butter

1/2 tsp salt

1/4 tsp black pepper

1/4 cup sliced green onions

1/2 cup diced tomatoes

1/2 cup sour cream

1/3 cup salsa

1 avocado, diced

hot sauce to taste


Instructions

1. Preheat the oven to 425°F and bake the tater tots according to the package directions until golden and crispy.

2. While the tater tots cook, brown the breakfast sausage in a skillet over medium heat, breaking it into crumbles, then drain any excess grease.

3. In a bowl, whisk together the eggs, milk, salt, and black pepper until smooth.

4. Melt the butter in a nonstick skillet over medium-low heat, then add the egg mixture and cook gently, stirring often, until softly scrambled.

5. Divide the crispy tater tots among 4 serving bowls.
