Ingredients

1 lb shrimp, peeled and deveined

2 cups cooked quinoa

1 tbsp olive oil

2 tbsp lemon juice

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/3 cup Kalamata olives, sliced

1/2 cup feta cheese, crumbled

1/2 cup hummus

1/4 cup tzatziki

2 tbsp fresh parsley, chopped


Instructions

1. Cook the quinoa according to package directions if it is not already prepared, then let it cool slightly.

2. In a bowl, toss the shrimp with olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper until evenly coated.

3. Heat a skillet over medium-high heat and cook the shrimp for 2 to 3 minutes per side until pink and cooked through.

4. Prepare the toppings by dicing the cucumber, halving the cherry tomatoes, slicing the red onion, and getting the olives, feta, hummus, tzatziki, and parsley ready.

5. Divide the quinoa among four serving bowls.

6. Arrange the cucumber, tomatoes, red onion, olives, and cooked shrimp over the quinoa.

7. Add hummus, tzatziki, and feta to each bowl.

8. Sprinkle with fresh parsley and serve with extra lemon if desired.

Notes

Pat the shrimp dry before seasoning so they sear instead of steaming.
