Ingredients
1 cup water
1/2 cup unsalted butter
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
1 1/4 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup semi-sweet chocolate, chopped
1/2 cup heavy cream
1 teaspoon edible gold dust
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Add the water, butter, and salt to a saucepan over medium heat and bring to a gentle simmer.
3. Add the flour all at once and stir vigorously until the dough forms a ball and pulls away from the sides of the pan.
4. Cook the dough for 1 to 2 minutes, stirring constantly, to remove excess moisture.
5. Transfer the dough to a mixing bowl and let it cool for about 5 minutes.
6. Beat in the eggs one at a time until the dough is smooth, glossy, and thick enough to pipe.
7. Pipe small rounds of dough onto the prepared baking sheet, spacing them apart.
8. Bake for 25 to 30 minutes until puffed and golden brown. Do not open the oven too early.
9. Remove from the oven and cool completely.
10. Whip 1 1/4 cups heavy whipping cream with powdered sugar and vanilla extract until soft to medium peaks form.
11. Make a small hole in each profiterole and pipe in the whipped cream filling.
12. Heat 1/2 cup heavy cream until warm, then pour it over the chopped semi-sweet chocolate. Stir until smooth.
13. Dip the top of each filled profiterole into the chocolate.
14. Lightly dust or brush the tops with edible gold dust.
15. Chill briefly before serving.
