Ingredients

2 1/2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, very cold and cubed

1/2 cup heavy cream, plus more for brushing

1 large egg

2 teaspoons vanilla extract

1 cup mixed berries, fresh or frozen

1 cup powdered sugar

1 to 2 tablespoons milk or heavy cream

1 teaspoon lemon juice


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

3. Add the cold cubed butter and cut it into the flour mixture until it looks like coarse crumbs with pea-sized butter pieces.

4. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.

5. Pour the wet ingredients into the dry ingredients and stir gently until the dough starts to come together.

6. Fold in the mixed berries carefully, trying not to crush them.

7. Turn the dough onto a lightly floured surface and gently pat it into a round disc about 1 inch thick.

8. Cut the dough into 8 wedges and place them on the prepared baking sheet.

9. Chill the shaped scones for 15 minutes before baking.

10. Brush the tops lightly with heavy cream, then bake for 18 to 22 minutes, or until golden and set in the center.

11. Let the scones cool for 10 minutes.

12. Whisk together powdered sugar, milk or cream, and lemon juice until smooth, then drizzle the glaze over the scones.

Notes

Keep the butter very cold so the scones bake up flaky instead of dense.

If using frozen berries, do not thaw them before adding them to the dough.

Do not overmix the dough. A slightly shaggy dough makes softer, more tender scones.
