Ingredients

1 (30 ounce) bag frozen shredded hash browns

4 tablespoons butter

1 small onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 (10.5 ounce) can cream of chicken soup

2 cups milk

2 cups shredded cheddar cheese

1 cup sour cream

1 teaspoon salt

1/2 teaspoon black pepper

6 slices bacon, cooked and crumbled

2 green onions, sliced


Instructions

1. Melt the butter in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 4 to 5 minutes until softened. Stir in the garlic and cook for 30 seconds.

2. Pour in the chicken broth, cream of chicken soup, and milk. Stir until the mixture is smooth and well combined.

3. Add the frozen hash browns, salt, and black pepper. Bring the soup to a gentle simmer.

4. Reduce the heat to medium-low and cook for 20 to 25 minutes, stirring occasionally, until the potatoes are tender and the soup starts to thicken.

5. Stir in the shredded cheddar cheese a little at a time until melted.

Notes
