Ingredients

1 pound ground beef

1 small onion, chopped

3 cloves garlic, minced

6 cups green cabbage, chopped

1 can diced tomatoes, undrained

1 can pinto beans, drained and rinsed

1 cup corn

2 tablespoons taco seasoning

1 1/2 cups shredded cheddar cheese

2 cups Fritos

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Heat the olive oil in a large skillet over medium heat.

2. Add the ground beef and chopped onion, then cook until the beef is browned and the onion is softened.

3. Stir in the garlic, taco seasoning, salt, and black pepper, and cook for 30 seconds until fragrant.

4. Add the chopped cabbage and stir well to coat it in the beef mixture.

5. Cover the skillet and cook for 8 to 10 minutes, stirring occasionally, until the cabbage starts to soften.

6. Stir in the diced tomatoes, pinto beans, and corn.

7. Simmer uncovered for 5 to 7 minutes until the mixture is hot and the cabbage is tender.

8. Sprinkle the shredded cheddar cheese evenly over the top.

9. Cover for 1 to 2 minutes until the cheese is melted.

Notes

Use freshly shredded cheese for a smoother melt and better texture.

Add the Fritos only right before serving so they stay crisp and crunchy.
