Ingredients

2 tablespoons sesame oil

2 cloves garlic, minced

1 cup shiitake mushrooms, chopped

2 cups napa cabbage, shredded

1 cup carrots, julienned

1 cup mung bean sprouts

2 tablespoons soy sauce

1/2 teaspoon salt

1/4 teaspoon white pepper

16 egg roll wrappers

Water or cornstarch slurry for sealing

Vegetable oil for frying


Instructions

1. Heat sesame oil in a skillet over medium-high heat and sauté garlic until fragrant.

2. Add mushrooms, then stir in cabbage and carrots. Cook until just softened.

3. Mix in bean sprouts, soy sauce, salt, and white pepper. Cook 1 more minute.

4. Transfer filling to a colander and let cool completely.

5. Place an egg roll wrapper in a diamond shape. Add 2-3 tablespoons of filling just below center.

6. Fold the bottom corner over the filling, tuck in sides, and roll tightly. Seal the edge with water or slurry.

7. Repeat until all filling or wrappers are used.

8. Heat oil to 350°F in a skillet. Fry rolls in batches, turning occasionally, for 3-5 minutes until golden.

9. Drain on paper towels or a wire rack.

10. Serve hot with sweet chili or soy-vinegar dipping sauce.

Notes

Let the filling cool fully before wrapping to avoid soggy wrappers.

Do not overstuff or rolls may burst while frying.

For freezer prep, freeze uncooked rolls and fry directly from frozen—no thawing needed.
