Ingredients
1 pound fresh green beans, trimmed
1/2 cup all-purpose flour
2 large eggs
2 tablespoons milk
1 cup panko breadcrumbs
1/2 cup fine breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper, optional
4 cups vegetable oil, for frying
1 lemon, cut into wedges
1/2 cup ranch, garlic aioli, or dipping sauce of choice
Instructions
1. Trim the green beans, rinse them, and dry them very well with a clean kitchen towel.
2. Add the flour to one shallow bowl.
3. In a second bowl, whisk together the eggs and milk until smooth.
4. In a third bowl, mix the panko breadcrumbs, fine breadcrumbs, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne if using.
5. Coat the green beans in flour, dip them into the egg mixture, then press them into the seasoned breadcrumb mixture.
6. Heat the oil in a deep skillet or heavy pot to 350°F.
7. Fry the green beans in small batches for 2 to 3 minutes, turning as needed, until golden and crisp.
8. Transfer the fried green beans to a paper towel-lined plate or wire rack and season lightly with extra salt while hot.
9. Serve warm with lemon wedges and your favorite dipping sauce.
Notes
Dry the green beans very well before coating so the breading sticks properly and fries crisp.
Fry in small batches to keep the oil temperature steady and prevent greasy coating.
