Ingredients
2 large Honeycrisp apples, peeled and diced
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 pinch ground nutmeg
1 tablespoon cornstarch
4 tablespoons brown sugar
1 package refrigerated pie crusts, thawed
1 egg, beaten (for egg wash)
Vegetable oil, for frying
Powdered sugar or caramel sauce, for topping
Instructions
1. In a skillet over medium heat, cook the apples, lemon juice, cinnamon, nutmeg, cornstarch, and brown sugar until the apples are soft and mixture thickens, about 10 minutes.
2. Let the filling cool completely.
3. Roll out the pie crusts and cut out circles about 5 inches in diameter.
4. Spoon about a tablespoon of the apple filling onto one half of each circle.
5. Fold over and press the edges with a fork to seal.
6. Brush with egg wash for shine.
7. Heat oil in a skillet to 350°F.
