Description

This fresh tomato soup is a cozy, comforting classic that’s perfect for chilly nights or quick weekday lunches. Made with roasted ripe tomatoes, caramelized onion, and sweet roasted garlic, it’s a velvety, homemade alternative to canned soup that bursts with summer flavor. Whether you’re looking for a healthy snack, easy dinner, or warming lunch idea, this tomato soup recipe is simple, delicious, and perfect for meal prep. Serve it with grilled cheese, as a dinner party starter, or pack it up for a thermos lunch. It’s the perfect go-to for comforting food ideas and quick homemade meals.

Ingredients

2 pounds fresh ripe tomatoes, halved

1 medium yellow onion, chopped

4 cloves garlic, unpeeled

2 tablespoons olive oil

2 cups vegetable broth

1/4 cup heavy cream

Salt, to taste

Black pepper, to taste

Fresh basil, for garnish

Instructions

1. Preheat the oven to 400°F and line a baking tray with parchment paper.

2. Place halved tomatoes cut-side up on the tray and nestle in the unpeeled garlic cloves.

3. Drizzle everything with olive oil and sprinkle with salt. Roast for 40-45 minutes until soft and caramelized.

4. While the tomatoes roast, sauté the chopped onion in a large pot over medium heat until soft and golden, about 8-10 minutes.

5. Peel the roasted garlic and add it, along with the tomatoes and sautéed onions, to a blender. Blend until smooth.

6. Pour the blended mixture back into the pot. Add the vegetable broth and stir to combine.

7. Simmer the soup for 10-15 minutes to deepen the flavor.

8. Stir in the heavy cream and season with salt and black pepper to taste.

9. Ladle into bowls and garnish with fresh basil before serving.

Notes

Use fully ripe tomatoes for the best flavor—slightly soft and fragrant.

Roast the garlic with the skins on to prevent burning and to sweeten its flavor naturally.

For an ultra-smooth finish, use a high-speed blender; for a more rustic texture, use an immersion blender.
