Ingredients

3 large yellow onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1.5 pounds boneless skinless chicken thighs, cut into chunks

2 cloves garlic, minced

1 teaspoon fresh thyme leaves

1/4 cup dry white wine

1.5 cups uncooked orzo pasta

2.5 cups low-sodium chicken broth

1 cup grated Gruyère cheese

Salt and pepper, to taste

Instructions

1. In a large skillet over medium heat, melt butter with olive oil and add sliced onions. Cook slowly for 35–40 minutes, stirring regularly, until golden and caramelized.

2. While onions cook, season chicken thighs with salt and pepper, then sear in a separate pan until browned on all sides. Do not cook through.

3. Once onions are deeply golden, stir in garlic, thyme, and white wine. Cook 2–3 minutes to reduce slightly.

4. In a greased ceramic casserole dish, combine caramelized onion mixture, browned chicken, uncooked orzo, and chicken broth. Stir to mix evenly.

5. Cover tightly with foil and bake at 375°F for 30 minutes.

6. Remove foil, top with grated Gruyère cheese, and bake uncovered for another 10–15 minutes until bubbly and golden.

7. Let the casserole rest for at least 10 minutes before serving.

Notes

Use ceramic baking dish for even heat and creamy texture.

Let the dish rest before serving to thicken naturally.

Caramelizing onions properly is key—don’t rush this step.
