Ingredients

2.5 lbs bone-in beef short ribs

4 large yellow onions, thinly sliced

2 large sweet onions, thinly sliced

2 tablespoons unsalted butter

4 garlic cloves, minced

1 cup dry red wine

6 cups beef stock

1 tablespoon Worcestershire sauce

3–4 fresh thyme sprigs

2 bay leaves

Salt and freshly ground black pepper, to taste

1 baguette, sliced and toasted

2 cups grated Gruyère cheese


Instructions

1. Season short ribs with salt and pepper. Sear in a Dutch oven until deeply browned. Remove and set aside.

2. Add butter and sliced onions to the pot. Cook over medium heat, stirring often, for 35-45 minutes until deeply caramelized. Add garlic near the end.

3. Deglaze with red wine, scraping up all browned bits. Reduce slightly.

4. Return short ribs to the pot. Add beef stock, Worcestershire sauce, thyme, and bay leaves.

5. Cover and braise in a 325°F oven for 2.5 to 3 hours until meat is tender and falling off the bone.

6. Remove ribs, discard bones, and shred meat. Return meat to the pot and season to taste.

7. Ladle soup into oven-safe bowls. Top each with a slice or two of toasted baguette and grated Gruyère.

8. Broil until cheese is melted, bubbly, and golden brown. Serve hot.
