Ingredients
2 large eggs, separated
2 tablespoons whole milk
1/4 teaspoon pure vanilla extract
1/4 cup all-purpose flour
2 tablespoons granulated sugar
1/4 teaspoon lemon juice or cream of tartar
Powdered sugar, for dusting
Neutral oil or butter, for greasing
Instructions
1. Whisk egg yolks with milk, vanilla, and sifted flour until smooth and thick.
2. In a separate clean bowl, beat egg whites with lemon juice, gradually adding sugar, until stiff, glossy peaks form.
3. Gently fold one-third of the meringue into the yolk mixture to loosen, then fold in the rest carefully to keep it airy.
4. Preheat a nonstick pan on low heat, grease ring molds, and spoon batter into molds until 3/4 full.
5. Add a few drops of water to the pan, cover, and cook for 4–5 minutes per side, until golden and set.
6. Carefully remove molds, dust with powdered sugar, and serve with berries or whipped cream.
Notes
Use room temperature egg whites to ensure stable meringue that holds height.
Low heat cooking is key—don’t rush or you’ll burn the bottoms before the centers cook.
Grease your molds and pan thoroughly to prevent sticking.
