Ingredients
1 cup creamy peanut butter
2 large ripe bananas, mashed
2 large eggs
1/4 cup maple syrup or honey
1 teaspoon vanilla extract

1/3 cup mini chocolate chips, optional
Instructions
1. Preheat the oven to 350°F and line a 12-cup muffin pan with paper liners or lightly grease each cup.
2. Add the ripe bananas to a large bowl and mash until mostly smooth.
3. Whisk in the peanut butter, eggs, maple syrup or honey, and vanilla extract until the batter looks smooth.
4. Stir in the baking soda and salt just until combined.
5. Fold in the mini chocolate chips if using.
6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
7. Bake for 15 to 18 minutes, or until the tops are puffed and a toothpick inserted in the center comes out mostly clean.
