Ingredients

6 cups thinly sliced apples (Granny Smith and Honeycrisp)

2 tablespoons lemon juice

1/2 cup granulated sugar

1/4 cup brown sugar

1/4 cup cornstarch

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/8 teaspoon salt

2 tablespoons cold unsalted butter, cubed

2 9-inch pie crusts (homemade or store-bought)

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for sprinkling)


Instructions

1. Prepare the pie dough by fitting one crust into a 9-inch pie dish. Chill while preparing filling.

2. Peel, core, and thinly slice the apples. Toss them with lemon juice, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and salt. Let sit for 10 minutes.

3. Layer the apple slices evenly in the chilled pie crust, stacking them to form structured layers.

4. Dot the top of the apples with the cubes of cold butter.

5. Roll out the second crust and either place whole or cut into strips for a lattice. Crimp the edges.

6. Brush the top crust with egg wash and sprinkle with coarse sugar.

7. Bake the pie at 400°F for 20 minutes. Reduce heat to 375°F and bake another 40 minutes, until golden and bubbling.

8. Let cool for at least 2 hours before slicing.

Notes

Use a glass pie dish to ensure the bottom crust cooks evenly and you can check its doneness.

Chill the dough both before and after assembling the pie to ensure a flaky crust.

Let the filling sit before baking so excess moisture is released, helping prevent sogginess.
