Ingredients

8 ounces white chocolate baking bars

4 ounces cream cheese, softened

2 tablespoons eggnog

1 teaspoon rum extract

1/4 teaspoon ground nutmeg

1/2 teaspoon vanilla extract

1 cup powdered sugar

8 ounces white chocolate (for coating)

sprinkles or extra nutmeg for garnish (optional)


Instructions

1. Finely chop 8 ounces of white chocolate baking bars and melt in a heatproof bowl over simmering water or in short microwave bursts. Stir until smooth and let cool slightly.

2. In a mixing bowl, beat 4 ounces of softened cream cheese until smooth. Add 2 tablespoons eggnog, 1 teaspoon rum extract, 1/4 teaspoon ground nutmeg, and 1/2 teaspoon vanilla extract. Mix until combined.

3. Add 1 cup powdered sugar and beat until fully incorporated. Slowly mix in the melted white chocolate to form a thick mixture. Chill for at least 2 hours until firm.

4. Scoop and roll into 18 evenly sized balls. Place them on a parchment-lined tray and chill for another 30 minutes.

5. Melt 8 ounces of white chocolate. Dip each truffle, allow excess to drip, and return to tray. Garnish with nutmeg or sprinkles if desired.

6. Chill truffles for 15–20 minutes until set. Serve chilled or at room temperature.

Notes

Chill the filling thoroughly so it’s firm enough to roll.

Use high-quality white chocolate bars for smoother melting.

To prevent cracking, let truffles come to room temp slightly before dipping in chocolate.
