1 cup eggnog

1/2 cup whole milk

3 large eggs, separated

1 tablespoon cornstarch

1/8 teaspoon cream of tartar

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cinnamon

Pinch of ground cloves

1 teaspoon vanilla extract

1 tablespoon unsalted butter (for ramekins)

Powdered sugar (optional, for dusting)


Instructions

1. Butter and sugar 4 ramekins and chill while you make the custard base.

2. Whisk eggnog, milk, sugar, and cornstarch in a saucepan over medium heat until thickened.

3. Remove from heat and whisk in egg yolks, vanilla, and spices until smooth.

4. Beat egg whites with cream of tartar until soft peaks form. Slowly add sugar and beat to stiff peaks.

5. Fold one-third of the egg whites into the custard to lighten it, then gently fold in the rest.

6. Spoon mixture into ramekins, level tops, and run your thumb around the rim for a clean rise.

7. Bake at 375°F for 13–16 minutes until puffed and golden.

8. Serve immediately with powdered sugar or whipped cream.

Notes

Use room temperature eggs for the best volume.

Don’t overmix the egg whites into the custard or you’ll lose the lift.

Bake right before serving for the most dramatic soufflé presentation.
