Ingredients
1/2 cup butter
1 cup water
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
1 1/2 cups eggnog
1/2 cup heavy cream
1 package (3.4 oz) instant vanilla pudding mix
1/4 teaspoon ground nutmeg
Powdered sugar for dusting (optional)
Instructions
1. Preheat oven to 400°F (200°C). In a saucepan, combine butter, water, and salt. Bring to a boil.
2. Add flour all at once and stir vigorously until dough forms a ball. Remove from heat.
3. Transfer to a mixing bowl and let cool for 5 minutes. Beat in eggs one at a time until smooth and shiny.
4. Spoon or pipe dough into 12 mounds on a parchment-lined baking sheet.
5. Bake 30–35 minutes until golden brown. Cool completely on a wire rack.
6. In a bowl, whisk eggnog, heavy cream, and pudding mix until thickened. Stir in nutmeg. Chill.
7. Slice cooled puffs in half. Pipe or spoon in filling. Replace tops and dust with powdered sugar if desired.
Notes
Use full-fat eggnog for best consistency in the filling.
Don’t open the oven door while baking or the puffs may collapse.
Fill puffs shortly before serving to maintain crispness.
