Ingredients
1 and 1/2 cups gingersnap cookie crumbs
5 tablespoons unsalted butter, melted
24 ounces cream cheese, softened
1 cup granulated sugar
3/4 cup eggnog
1/2 cup sour cream
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
3 large eggs
Instructions
1. Preheat oven to 325°F. Combine gingersnap crumbs and melted butter, then press into bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
2. Beat softened cream cheese until completely smooth. Add sugar, spices, and vanilla, mixing until combined.
3. Add sour cream and eggnog, blend gently. Add eggs one at a time, mixing just until incorporated.
4. Wrap pan with heavy-duty foil. Pour filling over crust. Place in a larger roasting pan and add hot water halfway up the sides.
5. Bake for 55–65 minutes until edges are set and center slightly jiggles. Turn off oven, crack door, and cool for 1 hour inside.
6. Refrigerate for at least 6 hours or overnight. Garnish with grated nutmeg or whipped cream before serving.
