Ingredients
2 cups cooked shredded chicken
1/2 cup buffalo sauce
4 ounces cream cheese, softened
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 tablespoons sliced green onions
4 large flour tortillas
1 tablespoon butter or oil
1/4 cup ranch dressing, for serving
2 tablespoons blue cheese crumbles, optional for serving
Instructions
1. Add the shredded chicken, buffalo sauce, and softened cream cheese to a mixing bowl and stir until creamy and well combined.
2. Fold in the cheddar cheese, mozzarella cheese, and green onions.
3. Heat a large skillet over medium heat.
4. Lay one tortilla flat and spread one quarter of the filling over one half of the tortilla. Fold it over to close. Repeat with the remaining tortillas and filling.
5. Lightly grease the skillet with butter or oil.
6. Cook each quesadilla for 2 to 3 minutes per side until golden brown and crisp, and the cheese is fully melted.
7. Transfer to a cutting board and let rest for 1 minute before slicing.
8. Cut into wedges and serve hot with ranch dressing and optional blue cheese crumbles.

Use rotisserie chicken to make this recipe even faster.
Cook over medium heat so the tortillas crisp without burning before the cheese melts.
