Ingredients

8 ounces ramen noodles

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

8 ounces mushrooms, sliced

4 cups vegetable broth

3 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon maple syrup

1 medium carrot, julienned

2 baby bok choy, chopped

14 ounces firm tofu, cubed

2 green onions, sliced

1 teaspoon sesame seeds

1 tablespoon chili oil


Instructions

1. Press the tofu gently with paper towels, then cut it into cubes. Slice the mushrooms, julienne the carrot, chop the bok choy, mince the garlic, grate the ginger, and slice the green onions.

2. Heat the sesame oil in a large pot over medium heat. Add the garlic and ginger, then cook for about 30 seconds until fragrant.

3. Add the mushrooms and cook for 4 to 5 minutes until softened and lightly browned.

4. Pour in the vegetable broth, soy sauce, rice vinegar, and maple syrup. Stir well and bring the broth to a gentle simmer.

5. Add the carrot, bok choy, and tofu. Simmer for 3 to 4 minutes until the vegetables are tender but still bright.

6. Add the ramen noodles and cook according to the package directions, usually 3 to 4 minutes, until just tender.

7. Taste the broth and adjust seasoning if needed. Divide the ramen into bowls.

8. Top each bowl with green onions, sesame seeds, and chili oil before serving.

Notes

Cook the noodles only until tender so they do not become too soft in the broth.

For the best texture in leftovers, store the noodles separately from the broth whenever possible.

Add a spoonful of miso paste if you want a deeper, richer broth.
