Ingredients

1 1/2 pounds boneless skinless chicken breast, cut into bite-size pieces

1 tablespoon oil

1 small yellow onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons red curry paste

1 can (13.5 ounces) full-fat coconut milk

1 red bell pepper, sliced

1 cup carrots, thinly sliced

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon lime juice

1/4 cup fresh basil or cilantro, chopped

4 cups cooked jasmine rice


Instructions

1. Heat the oil in a large skillet over medium heat. Add the sliced onion and cook for 2 to 3 minutes until it starts to soften.

2. Stir in the garlic and ginger, then cook for 30 seconds until fragrant.

3. Add the red curry paste and stir well for 1 minute so the flavors bloom.

4. Add the chicken pieces and cook for 4 to 5 minutes, stirring often, until the outside is no longer pink.

5. Pour in the coconut milk, then add the bell pepper, carrots, soy sauce, and brown sugar. Stir until the sauce is smooth.

7. Stir in the lime juice and fresh basil or cilantro.

Notes

Use full-fat coconut milk for the richest, creamiest sauce.

For a milder curry, reduce the red curry paste to 2 tablespoons.

Add a splash of water or coconut milk when reheating if the sauce thickens in the fridge.
