This Easy Steamed Cassava Cake is a soft, chewy, coconut-rich dessert that feels homemade, comforting, and perfect for sharing. Ingredients
2 pounds grated cassava, thawed if frozen and lightly drained
1 cup coconut milk
1 cup condensed milk
1 cup evaporated milk
2 large eggs
1/2 cup granulated sugar
1/4 cup melted butter
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup macapuno or shredded young coconut, optional
1/2 cup grated mild cheddar cheese, optional topping
1/2 cup condensed milk, for the topping
1/4 cup coconut milk, for the topping
1 large egg, for the topping
1/4 cup grated mild cheddar cheese, optional for the topping
Instructions
1. Grease an 8-inch round or square pan and prepare a steamer with enough water for steady steaming. Wrap the steamer lid with a clean towel to catch condensation.
2. In a large bowl, mix grated cassava, coconut milk, condensed milk, evaporated milk, eggs, sugar, melted butter, vanilla, and salt until smooth and evenly combined.
3. Fold in macapuno or shredded young coconut if using. Pour the mixture into the prepared pan and smooth the top.
4. Place the pan in the steamer, cover, and steam over medium heat for 45 to 55 minutes, or until the center is set.
5. In a small bowl, whisk condensed milk, coconut milk, and egg for the topping. Pour it gently over the steamed cassava layer. Add grated cheese if desired.
6. Steam for another 15 to 20 minutes, or until the topping is set and glossy.
7. Remove from the steamer and cool completely before slicing. Chill for cleaner slices, then serve cool, room temperature, or gently warmed.
Notes
Drain thawed frozen cassava lightly if it looks watery, but do not squeeze it completely dry.
Keep the heat at medium so the cake cooks evenly without becoming tough around the edges.
